Our favourite, which is quite possibly why its common name is Honey Suckle.
This amber coloured honey has a strong caramel flavour. The tree generally flowers only every second year, late spring to early summer. Its large red bottle brush type flowers make it quite easy to recognise.
The tree can be found from the north cape through to the Marlborough Sounds.
Latin name is Knightia excelsa.
The 2018/2019 season has been exceptional for Rewarewa flowering.

Our honey honey will crystalise over time so if it is too hard to get out of the jar we recommend sitting the whole closed jar in warm water until the honey is runny once again.
